Hillrock Estate Description
Our Canal's Family Selection from Hillrock is their Solera Bourbon Pinot Noir Barrel Finish. Hillrock's Solera Bourbon is the world’s first solera-aged bourbon, meaning that a small portion of the whiskey is removed periodically and new whiskey is added. After aging in the solera, our Canal's Family Selection was then moved to a Pinot Noir cask.
Wine Enthusiast: 93 Points
This wine cask-finished Bourbon entices with a mellow caramel aroma. The drying palate opens relatively woody, with cedar and spice, and a hint of raisin. It takes quite a lot of water to adjust, but it's worth tinkering with, finding the balance pulls out cocoa powder, vanilla and almond tones and rounds out the oaky edges, finishing with a flurry of cinnamon, clove and nutmeg.
